ZUCCHINI SAUTE
This is a tasty, simple veggie dish using up some of the abundant zucchini from the garden, or just an anytime veggie. I have never had a vegetable garden, but I can imagine if I did, I'd want to grow zucchini. That could be fun! Veggies on a low-carb diet are mostly our good carbs and to make the meal well-rounded, interesting and tasty, make some fun veggie sides.
2 tbsp olive oil (25 mL)
2 cups chopped onion (500 mL)
4
small zucchini, unpeeled and cubed, or
cut into little wedges
1/2 tsp salt (2
mL)
1/4 tsp black
pepper (1 mL)
1/4 tsp garlic powder (1 mL)
In large saucepan, in olive oil, cook onion until
tender. Add zucchini, salt, pepper and
garlic powder. Saute until zucchini is
