PARMESAN BROCCOLI
So simple, but to me this broccoli side dish almost looks gourmet next to a nice, juicy steak - not so much in the photo though - lol. Broccoli is high in vitamin A and vitamin
K. For people needing to supplement with
large doses of vitamin D, ample supply of vitamin K and A help keep our vitamin
D metabolism in balance.
1 lb broccoli, chopped small
(0.45 kg)
2 tbsp olive oil (30 mL)
1/2 tsp seasoning salt (2 mL)
1/4 tsp black pepper, OR to taste (1 mL)
11/2 tbsp Parmesan cheese (22mL)
Bring
a pot of water to a boil. Add broccoli
and cook 2 minutes. Remove with a
slotted spoon or pour over a colander placed over a larger bowl.
In
large skillet, heat oil over medium-high heat. Add broccoli and sprinkle with
seasoning salt and black pepper. Stir
fry 2 minutes or just until tender. Place broccoli in a serving dish, sprinkle
with Parmesan cheese and serve.
Yield: 4 to 6 servings
