MINI BANANA LOAVES
Such cute loaves make a dainty, pretty display
at the tea table. Great after-school snack for children too. What a nice snack for the kids to come home to after a long day at school. Good carbs! One of the favorite baking recipes from LCAF's, vol-1 in my section of the book was my Banana Walnut Bread. This recipe is quite different and one can certainly do the same with my older recipe and make the recipe into mini loaves instead. These particular banana loaves are much nicer the next day after being refrigerated. They just seem to get better with age day after day. This recipes makes 3 mini loaves.

cup mashed bananas (250 mL)
Liquid
sweetener (sucralose or stevia) to equal 1 cup sugar (250 mL)
1/2 cup light-tasting olive oil (125 mL)
1/3 cup buttermilk (75 mL)
1/4
cup granulated erythritol (60 mL)
1/2 tsp vanilla extract (2 mL)
2 cups Gluten-Free Bake Mix, OR Keto Bake Mix (500 mL)
1 tsp baking soda (5 mL)
1/2 tsp salt (2 mL)
1/4
cup raisins, snipped in half, OR (60 mL)
1/2 cup sugar-free chocolate chips (125 mL)
Cream Cheese Drizzle (optional):

oz cream cheese, softened (60 g)

tbsp powdered Steviva® Blend, OR (30 mL)
Liquid sweetener, to taste

tbsp heavy cream (15 mL)
Preheat oven to 350°F (180°C). Grease 3, 51/4 x 31/4
x 21/4-inch (15 x 8 x 6 cm) nonstick mini loaf pans. In
food processor, process eggs. Add mashed
bananas, liquid sweetener, olive oil, buttermilk, granulated erythritol and vanilla
extract; process.
In medium bowl,
combine Gluten-Free Bake Mix, OR Keto Bake Mix, baking soda and salt. Add dry ingredients to wet ingredients and
process about 1 minute, until thickened.
Stir in raisins, OR chocolate chips. Pour or scrape into prepared mini
loaf pans. Bake 35 minutes, or until toothpick inserted in center comes out
clean.
Cream Cheese
Drizzle: In small bowl, combine softened cream cheese
with powdered Steviva® Blend,
erythritol, OR liquid sweetener, to taste, and heavy cream. Place in pastry bag with plain tip and pipe
Cream Cheese Frosting in stripes over the mini banana loaves.
Yield: 30 (10 x 3) slices
