These are SO cute to serve. They'd be great for Super Bowl, for instance. You can make them ahead and reheat them quickly in the oven or microwave oven...either way! They are just as good.
I used a nonstick muffin top pan. It made 9 little pies. Each piece of dough, bottom and top weighed 0.7 oz. I put the top piece on over the filling and pinched close with the bottom piece of dough. I rolled out little circles on parchment...covered the dough with plastic. I have a little pie crust roller which is really handy.
It takes longer to cook these pies when using a nonstick pan. At 400 deg. F., these took 14 minutes. Check after 12 minutes. They should be nicely golden brown underneath and beginning to brown on top. HERE IS WHERE YOU CAN FIND OUT HOW TO MAKE MY MEAT PIES - use the same filling or savory beef filling of your choice, or chicken, or whatever you can dream up. They are even more tasty if you add a little Mozzarella cheese on top of the filling before covering...hmmm, yummy!!
You can make a GRAIN-FREE Bake Mix for the Miracle dough with 1 cup almond flour and 1/3 cup coconut flour (for a more chewy, very regular dough-like, substantial pastry pie - or simply use 2/3 cup almond flour and 2 tbsp coconut flour...use it all) or reduce the coconut flour to about 3 tbsp for a crispier (I am hoping) crust for other applications. You will need 3/4 cup plus 2 tbsp of this bake mix and form into a beautiful soft dough, following the instructions at the link above. Make the little balls a little smaller...0.6 oz each instead of 0.7 oz each, so that you can still make 9 mini pies. You will need an electronic scale (useful for the low-carb kitchen in any case).
I still prefer the Gluten-Free Low-Carb Bake Mix for the Miracle Dough, however, it's still pretty good with the above mixture.
I use finely grated Mozzarella cheese using the grater assembly on my Food processor (ancient food processor, a Braun, but it works). I is a cheese I get a Price Smart (Costco in the States). See pic below.
