CRUNCHY BACON AND ALMOND TOSSED SALAD
Delicious salad that is guaranteed not to have much in
the way of leftovers! Double the recipe,
if serving more than 4 people. The
wilted lettuce salad does not keep very well.
Lemon juice in the dressing is a great alternative if you are battling Candida (yeast)
issues.

Half a large head of Iceberg lettuce
1/4 cup
chopped red pepper (60 mL)
1/4 cup
chopped orange pepper (60 mL)

bacon strips, cooked and crumbled
1
tbsp bacon fat (15 mL)
2/3 cup
sliced almonds (150 mL)
Sweet and Sour Dressing:
1/4 cup
light-tasting olive oil (60 mL)
Liquid sweetener to equal 2 tbsp (30 mL)
sugar
2 tbsp powdered erythritol
(30 mL)
1 tbsp lemon juice, OR
vinegar (15 mL)
1/2 tsp
salt (2 mL)
1/4 tsp
black pepper (1 mL)
Wash
lettuce and dry in salad spinner. Place
in salad bowl along with peppers and 3 chopped, crispy bacon strips.
In
nonstick frying pan, toast almonds in bacon fat over medium heat. Stir in remaining bacon bits. Allow to cool while making the dressing.
Sweet
and Sour Dressing: In blender, combine olive oil, liquid
sweetener, erythritol, lemon juice, OR vinegar, salt and black pepper.
Toss
salad with dressing. Place bacon-almond
mixture on top of salad. Serve
immediately.
Yield: 4 servings

Mogli is incredibly tame and will come right up to me when he is hungry, as do the squirrels and Titi monkeys (Jeoffroy's Tamarin). Only problem is the other day Mogli gave me a flea! ;) I usually try to keep my distance, as they are still wild animals, and one mustn't take a chance.
