MARINARA MEAT LOAF
PATTIES
These cute, uniform meat loaf patties were a change of pace from
hamburgers. Very tasty and easy to make those uniform shapes using the wide mouth Mason jar lid covered with plastic wrap. Pancake rings would also work or a large, round cookie cutter. Failing that, measure using the 1/4 cup measuring cup, make a ball and flatten in the palms of your hands. Simple! This is tasty way to serve ground beef and make it much more interesting! You can even serve these on low-carb hamburger buns or on my new Sandwich Thins.
2 lbs ground beef (0.9 kg)
3 eggs
11/2 tsp salt (7 mL)
1 tsp Italian seasoning (5
mL)
11/3 cups grated Mozzarella cheese (325 mL)
Preheat oven to 425°F (220°C).
Preheat oven to 425°F (220°C).
In
large bowl, place ground beef. In small
bowl, whisk eggs, salt and Italian seasoning together.
Prepare
Marinara Sauce (half the recipe - if you decide to make the whole recipe, you can freeze the rest).
Line
a wide mouth Mason jar lid with plastic wrap.
Place a scant 1/4 cup (60 mL) meat mixture on the plastic
wrap and press out to form a nice round shape.
Place
the patties on a greased baking sheet.
Bake 14 minutes. Top with a scant
1 tbsp (15 mL) Marinara sauce and 1 tsp grated Mozzarella cheese and bake
another 5 minutes.
Yield: 21 patties
