COTTAGE CHEESE PANCAKE

These little pancakes were so cute and so tasty! You have to try these. I'm sure they will become a favorite if you do. They are quite low in carbs, so would make a good side with some eggs and bacon or sausage.
1/2 cup
cottage cheese (125 mL)
1/3 cup
Gluten-Free Bake Mix 2 (click for recipe) (75 mL)
OR Grain-Free, GF Bake Mix, OR Keto GF Bake Mix
OR Grain-Free, GF Bake Mix, OR Keto GF Bake Mix

tsp olive oil, divided (15 mL)
In
food processor, process cottage cheese, Gluten-Free Bake Mix 2, OR alternative and
eggs until smooth.
Brush
nonstick frying pan with olive oil and set over medium heat. Drop pancake batter by the tablespoonful (15
mL) onto the hot pan. Cook until
possible to carefully flip the pancakes.
Lower the heat to medium low and cook the remaining side. Repeat, however, keep the heat at medium low
and cook the remaining pancakes in the same manner. Serve with butter and drizzle with your
favorite sugarless pancake syrup.
Yield: 15 mini pancakes
