“BREADED” FRIED
TOMATOES
Using beautiful, large tomatoes, this
made a wonderful, tasty side…quite different to anything I have had in my
life. I never thought to bread tomatoes
until now. What I have been missing all
my life!!
Light-tasting olive oil, as
required
2 large tomatoes, sliced
2 eggs
1 tbsp water (15 mL)
Breading:
1/2 cup ground almonds, OR almond flour (125 mL)
3 tbsp grated Parmesan cheese
(45 mL)
(the kind in a can)
1/4 tsp salt (1 mL)
1/4 tsp thyme (1 mL)
1/8 tsp black pepper (0.5 mL)
Place sliced tomatoes
on a dinner plate. In small bowl, beat
eggs and water with a fork.
Breading: In small bowl,
combine ground almonds, OR almond flour, Parmesan cheese, salt, thyme and black pepper.
Dip slices of tomato
in the egg wash and then spoon breading on both sides of the tomatoes. In nonstick pan, place tomato slices in a
little hot olive oil and fry on both sides until golden brown. Serve right away.
Helpful
Hints: Olive oil was not added into the nutritional
analysis. Some people will use more and
some will use less.
