MOZZARELLA, GREEN
ONIONS AND BACON CAULI MASH
Here is a great loaded cauli mash side dish that is sure to
please the family. Mozzarella cheese added to cauli mash makes it a lot thicker and more substantial-tasting. It is still not mashed potatoes. It is cauli mash, but I am one of those people that prefers cauli mash to mashed potatoes. When one is in maintenance, you can always mash in one small potato and get a closer match to mashed potatoes. I have done that many times and my husband loves it!
6 cups cauliflower florets (1.5 L)

oz cream cheese (60 g)

tbsp butter (30 mL)

tbsp sour cream (30 mL)

tsp salt (5 mL)
1/2 tsp
crushed garlic (2 mL)
1/4 tsp
white pepper (1 mL)

cups grated Mozzarella cheese (300 mL)
1/3 cup chopped
green onions (75 mL)
2
strips bacon, cooked and chopped
In large pot of boiling water, cook cauliflower about
10 minutes until very tender. Place in
salad spinner and spin to get rid of excess water or place in colander and
allow to drip dry and dry further by patting with paper towels.
In food processor, process cauliflower. Add cream cheese, butter, sour cream, salt,
garlic and white pepper; process. Add 1
cup (250 mL) grated Mozzarella cheese and process. Stir in 1/4 cup
chopped green onions. Place cauli mash
in serving dish and sprinkle down the center with 1 tbsp (15 mL) chopped green
onions, remaining Mozzarella cheese and chopped bacon. Serve.
