OMELET PIZZA
The delicious taste of pizza without the carbs! This is a very tasty breakfast and it is great the next day as well. This is a fun way to change up the usual breakfast menu, especially on the weekend.
Omelet Crust:
6
extra-large eggs, separated
2 tbsp butter (60 mL)
1
tsp cornstarch, OR arrowroot (5 mL)
powder
1/2 cup
half-and-half cream, OR (125 mL)
whipping cream
1/4 cup water (60
mL)
1/4 tsp salt (1
mL)
1/8 tsp white
pepper (0.5 mL)
Pizza Sauce:

fl oz can tomato paste (156 mL)
1/4 cup water (60
mL)

tsp Itlaian seasoning (5 mL)
1/8 tsp salt (0.5
mL)
1/8 tsp black
pepper (0.5 mL)
Topping:

hot dog wieners, OR 7 oz sliced ham (200 g)

cups grated Mozzarella cheese (500 mL)
In
medium bowl, beat egg whites until stiff. In small bowl, beat egg yolks with
fork. Set aside. In small saucepan, melt
butter. Stir in cornstarch, OR arrowroot
powder and gradually stir in half-and-half cream, OR whipping cream and
water. Add salt and white pepper. Bring to boil. Stir some into egg yolks. Return mixture to saucepan and stir over very
low heat 1 minute or until thickened. In large bowl, pour sauce and fold in egg
whites. Spread in greased 15 x 10-inch
(38 x 25 cm) jelly roll pan. Bake in
350°F (180°C) oven 10 to 12 minutes.
Spread pizza sauce atop, adding sliced wieners, OR sliced ham and
Mozzarella cheese. Bake another 10 to 12
minutes.
Pizza Sauce: In small bowl, combine, tomato paste, water, Italian seasoning, salt and black pepper.
Variations: (Use
any meat such as salami or pepperoni, beef sausage, hamburger, etc.) Tuna-Cheese
Roll:
Filling: Follow directions for omelet crust white sauce, except
omit eggs and use 3 tbsp (45 mL) soy, oat, einkorn or spelt flour and 1/8
tsp (0.5 mL) salt. Stir in 1 cup
(250 mL) grated Cheddar cheese. Stir in
6 oz (170 g) can chunk-style tuna. Omelet
Roll: Prepare as for Omelet
Crust. Loosen edges of crust after baking. Spread filling over crust. Roll up from one short side, using a thin,
firm spatula for assistance. Yield: 6 servings.
