BLUEBERRY CHEESECAKE
POPSICLES
These are amazing! They are creamy and delicious. Blueberries are full of anti-oxidants, has vitamin K, protects against diseases and is great for a glowing, healthy skin.
11 oz frozen blueberries (311 g)
4 oz regular cream cheese (125 g)
Liquid sweetener (sucralose or stevia) to equal 2/3 cup sugar (150 mL)
4 tbsp heavy cream (60 mL)
1/2 tsp blueberry, OR vanilla extract (2 mL)
INSTRUCTIONS:
In colander, rinse blueberries if they are covered in ice. If desired, spin dry in a salad spinner. Add to blender or food processor (add berries last) along with cream cheese, liquid sweetener, heavy cream and blueberry, OR vanilla extract. Blend well. Pour into 8 popsicle molds and freeze. To remove run the base of the popsicle mold under running hot water.
Note: Recently, I found it impossible to blend this mixture with the frozen berries added first to my blender. I gave up and used my food processor instead, which worked very well.
