PEPPERS AND TOMATOES
WITH BACON
This makes a wonderful tasty, healthy and colorful side dish for just about any entrée. It is a little unusual as I decided to use some Roma tomatoes as well.
8 slices bacon
(reserve bacon fat)
4 large peppers of different colors
4 medium-sized Roma tomatoes
Salt and pepper, to taste
In large frying pan, cook bacon until browned, but not too crisp. Set aside to drain and cool on paper towels. Once cool cut into small pieces, using kitchen shears.
Wash
seed and slice peppers. Wash the
tomatoes and cut the end off where the stalk was attached. Chop the tomatoes.
In some bacon fat, cook the peppers and tomatoes until softened. Salt and pepper to taste. Stir in bacon bits. Serve hot.
