BEEF BITES WITH CARAMELIZED ONIONS AND CHEDDAR CHEESE

BEEF BITES WITH CARAMELIZED ONIONS AND CHEDDAR CHEESE

These flavorful meatballs smothered with caramelized onions and Cheddar cheese are taken to another level when served with Big Mac Sauce.  A delicious meal that the whole family will love!


2 lbs lean ground beef (0.9 kg)

2 tsp Worcestershire sauce (10 mL)

11/2 tsp salt (7 mL)

1/2 tsp Montreal Steak seasoning (2 mL)

1/2 tsp black pepper (2 mL)

4 tbsp olive oil (15 mL)

1 large onion, sliced

1/2 tsp baking soda (2 mL)

1 cup grated Cheddar cheese (250 mL)

Big Mac Sauce:

1/2 cup mayonnaise (125 mL)

2 tbsp dill pickle relish (30 mL)

1 tbsp sugar-free ketchup (15 mL)

11/2 tsp crushed garlic (from a jar) (7 mL)

1 tsp mustard (5 mL)

1/8 tsp onion salt (0.5 mL)

 

In medium bowl, combine ground beef with Worcestershire sauce, salt, Montreal Steak seasoning and black pepper.  Form small golf-ball sized meatballs and fry half the meatballs in large frying pan in 11/2 tbsp (22 mL) olive oil on both sides until brown and cooked through.  Repeat with the remaining meatballs.  Keep warm in a warm oven on a large meat serving platter. 

In nonstick frying pan, cook onions over medium heat in 1 tbsp (15 mL) olive oil until turning soft and brown.  Add baking soda after the onions turn soft and translucent and cook until turning brown.  Top meatballs with the caramelized onions and top with Cheddar cheese.  Place under the oven broiler briefly to melt the cheese and serve with Big Mac Sauce. 

Big Mac Sauce:  In small bowl, combine mayonnaise, dill pickle relish, ketchup, garlic, mustard and onion salt.

Yield:  24 meatballs
