This dressing is the best!! My husband loves this
salad dressing so much! He uses it on so many things…just because it
adds flavor and gives him the salt he often craves. I like this dressing
as one does not need a raw egg. The nutritional analysis in the box is
for the dressing. See Helpful Hints.
Salad:
8 cups shredded
Romaine lettuce (2 L)
1/3 cup grated Parmesan
cheese (75 mL)
6 slices crisp,
cooked bacon, crumbled
2
tsp Dijon mustard (10 mL)
2 tsp lemon juice
(10 mL)
1 tsp crushed
garlic (5 mL)
1/2 tsp salt (2 mL)
1/2 tsp black pepper (2 mL)
1/3 cup grated Parmesan
cheese (75 mL)
(the kind
in a can is fine)
1 cup
light-tasting olive oil (250 mL)
Salad: In large bowl, toss lettuce with Parmesan cheese and bacon bits, if using. Pour some Creamy Caesar Dressing over salad just before serving and toss to coat well. Serve immediately.
Creamy Caesar Dressing: In blender, combine mayonnaise, Dijon mustard, lemon juice, garlic, salt and black pepper; blend. Add Parmesan cheese; blend. Through opening in lid slowly add olive oil while the blender is running at low speed. Serve immediately and refrigerate leftovers.
Helpful Hints: This dressing should last 2 weeks in the refrigerator. I did the analysis for the dressing
separately as this dressing makes a lot and chances are you will not need it
all. The nutritional analysis for the
Caesar salad alone to serve 6 is: 79.4 calories; 9.1 g protein; 3.7 g fat; 1.3
g fiber; 1.1 g net carbs.
