A delicious, rich and juicy meat loaf with lots of cheese and vegetables. An easy week night meal. Serve with cauli mash and another vegetable or salad for a large and satisfying meal.
2 tbsp butter (30 mL)
8 oz mushrooms, minced (250 g)
1 small onion, diced
1 green pepper, diced
21/2 lbs lean ground beef (1.1 kg)
2 tbsp coconut flour (30 ml)
2 eggs
2 tsp salt (10 mL)
1 tsp Worcestershire sauce (5 mL)

tsp black pepper (3 mL)
9 oz Cheddar slices (270 g)
1 cup grated Cheddar cheese (250 mL)
Preheat the oven to 375°F (190°C).
In large frying pan, in butter, cook mushrooms, onions and green pepper 2 minutes, stir and cook a further 2 minutes.
In large bowl, combine ground beef, cooked vegetables and coconut flour. In small bowl, whisk together eggs, salt, Worcestershire sauce and black pepper. Mix into the ground beef.
In 1 qt (1 L) casserole dish, spread half ground beef
mixture, cheese slices and remaining ground beef mixture. Bake 40 minutes. Cover with grated Cheddar cheese and bake 20
more minutes. Let cool 10 minutes before
slicing.
