MEAT LOAF WITH
CHEDDAR CHEESE SAUCE
This meat loaf uses green onions in the mix. A small amount of coconut flour binds the meat loaf. The Cheddar Cheese Sauce is a great flavor enhancer.
2 tsp olive oil (10 mL)
2 tsp crushed garlic (10 mL)

cup green onions, chopped (175 mL)
(mostly the white parts)
2 lbs lean ground beef (0.9 kg)
2 tbsp coconut flour (30 mL)
2 eggs
1 tsp salt (5 mL)

tsp seasoning salt (3 mL)

tsp black pepper (2 mL)
1/2
tsp oregano (2 mL)
Cheddar Cheese Sauce:
4 oz regular cream cheese (125 g)
3 tbsp butter (45 mL)

cup whipping cream, OR low-carb milk (75 mL)

tsp salt (1 mL)
2/3
cup grated Cheddar cheese (150 mL)
Preheat the oven to 350°F (180°C).
In frying pan in olive oil and over medium heat, cook green onions a couple of minutes and then stir fry crushed garlic with the green onions a further 2 minutes.
In large bowl, combine ground beef, green onions and garlic mixture and coconut flour. In small bowl, beat eggs with a fork and add salt, seasoning salt, black pepper and oregano, mixing well. Add to ground beef and combine well.
Form
a loaf and place on cookie sheet lined with parchment paper. Bake 45 to 55 minutes. Allow to cool 10 minutes, slice and pour
Cheddar Cheese Sauce over the meat loaf.
