Savory Ground beef on top of the cottage cheese, Parmesan and Mozzarella layer.
(ANOTHER BISKMIX RECIPE)
This is one of my favorite recipes of the Biskmix collection that I have made so far. The rich lasagna flavors are sure to please. It is an attractive looking pie and will make people think you took hours making supper! However, these Biskimix pies are quick and easy to make, as long as you already have the Bake Mix made. I always have it on hand. This is a fabulous Biskmix pie that hearkens to yesteryear when Bisquick pies were so popular! It is nice to have a replacement for Bisquick to make some of those old favorites once again, but this time suited to our low-carb lifestyle!
1 lb lean ground beef (0.45 kg)
6 oz tomato paste (180 g)
1/2
cup water (125 mL)
1 tsp oregano (5 mL)
1/2
tsp basil (2 ml)
1/2
tsp seasoning salt (2 ml)
1/4
tsp black pepper (1 ml)
1 cup small curd cottage cheese (250 mL)
2 tbsp Parmesan cheese (30 mL)
1 cup shredded Mozzarella cheese (250 mL)
(divided)
Topping:
2 eggs
1/2
cup whipping cream (125 mL)
1/2
cup water (125 mL)
1/4
tsp salt (1 mL)
1/4
tsp black pepper (1 mL)
1 cup Biskmix, recipe below (250 mL)
Biskmix:
1 cup PLUS 6 tbsp Gluten-Free Bake Mix 2, (340 mL)
OR Keto Bake Mix (use 4 tbsp more of this bake mix)
2 tsp baking powder (10 mL)
1/4 cup butter (60 mL)
Preheat the oven to 400°F (200°C).
In nonstick frying pan, cook ground beef over medium heat, breaking it up small. Add tomato paste, 1/2 cup (125 mL) water, oregano, basil, seasoning salt and black pepper. Cook until most of the water has evaporated.
In small bowl, combine cottage cheese and Parmesan cheese.
Topping: In medium bowl, whisk eggs. Add whipping cream and water, salt and black pepper. Whisk in Biskmix until very well combined.
In
large 9-inch (23 cm) pie dish, spread cottage cheese mixture. Top with 1/2 cup (125 mL) shredded Mozzarella cheese. Spread cooked ground beef over top. Pour Biskmix mixture over the meat. Bake 25 minutes, or until set. Sprinkle with remaining Mozzarella
cheese. Bake 5 additional minutes.
Biskmix: In medium bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix and baking powder. Cut butter into small pieces and using fingers rub the butter into the dry ingredients (or use a food processor with a pulse button), until the mixture is crumbly and the butter is evenly distributed.
Helpful Hint: Keep leftover Biskmix in the fridge. Add to meat loaf or meat balls or use in your
next Biskmix recipe.
