BROCCOLI AND MONTEREY
JACK CHEESE SAUCE
A GOOD old stand-by vegetable and the classic broccoli and cheese sauce is changed up a bit by using Monterey Jack cheese, but you are more than welcome to use Cheddar cheese, if desired. I thought this was a nice change of pace.
INTERESTING BROCCOLI INFORMATION
Broccoli is eaten either raw or cooked. It is a part of the cabbage family. Broccoli is a particularly rich source of vitamin C and vitamin K. Broccoli can be boiled, roasted, steamed, microwaved or stir-fried for a cooked version. Broccoli salads are particularly nutritious and very popular. My husband prefers it if I blanch the broccoli for 2 minutes in boiling water, so that it is slightly less crunchy in a salad.
The sometimes perceived bitterness in broccoli is due to the glucosinolates; boiling typically takes care of that, whereas other methods preserve the glucosinolates.
1 lb chopped
broccoli, cooked (0.45 kg)
1/2
cup grated Monterey Jack cheese (125 mL)
Cheese Sauce:
4 oz cream cheese (125 g)
3 tbsp butter (45 mL)
1/3
cup cream and water mix, OR (75 mL)
almond milk
1/2
tsp salt (2 mL)
1/4
tsp black pepper (1 mL)
2/3
cup Monterey Jack cheese (150 mL)
Instructions:
Either
boil or steam broccoli until tender. Place cooked, well-drained broccoli in
small casserole dish. Pour Cheese Sauce
over broccoli and stir to combine well.
Sprinkle with 1/2 cup (125 mL) Monterey Jack
cheese. Place under the broiler until
the cheese has browned nicely. Keep an eye on it!
Cheese Sauce: In nonstick pan or
pot, combine cream cheese, butter, cream and water mix, OR almond milk, salt
and black pepper. Whisk
occasionally. Stir in Monterey Jack
cheese, until it melts and the sauce is smooth.
If necessary, add a tablespoon (15 mL) of water.
