CHEDDAR MUSHROOM HAMBURGER CASSEROLE
Cheesy and delicious with lovely
mushrooms, this easy casserole is going to please you and your family no end,
if you love mushrooms. Full of delicious flavors, this delicious recipe
is sure to please even picky eaters. One bite and they will be hooked! This is
wonderful for a weeknight supper, as it is simple and quick to prepare, plus
you will no doubt have leftovers as this casserole is very substantial,
especially if there are only two of you in the household. If you are not a
mushroom lover, replace the mushrooms with a mix of cooked onions and peppers,
or cooked, soft green beans, if desired.
Ingredients:
2 lbs lean ground beef (0.9 kg)
2 tsp salt (10 mL)
2 tsp minced garlic (10 mL)
1 tsp black pepper (5 mL)
1 tbsp butter (15 mL)
1 lb sliced mushrooms (0.45 kg)
1 tsp dried parsley (5 mL)
1/2
tsp seasoning salt (2 ml)
11/2 cups shredded Cheddar cheese (375 mL)
Creamy Sauce:
12 oz cream cheese (340 g)
5 eggs
1/4 cup whipping cream (60 mL)
Instructions:
Preheat the oven to 350°F (180°C).
In large, nonstick frying pan, brown ground beef,
over medium heat, breaking it up small with a spatula. Add salt, garlic and black pepper sometime
during cooking; combine well. Place
ground beef mixture in 9 x 13-inch (23 x 33 cm) casserole dish.
Wipe out the frying pan, add butter to it and cook
the mushrooms over medium heat until the moisture evaporates. During the cooking, stir in parsley and
seasoning salt.
Creamy Sauce: In food processor or in bowl with mixer,
process cream cheese, eggs and whipping cream until smooth.
Pour sauce over top of meat and mix well. Arrange mushrooms on top of the meat. Sprinkle with Cheddar cheese and bake 20 to
25 minutes until hot and bubbly.
