Next to chocolate desserts, lemon desserts are my favorite!
This recipe absolutely delighted my husband and me. It is addictively good. You
will want to sliver away at this dessert each time you make yourself a cup of
tea or coffee. The flavor is strongly lemon without being too tart. A perfect
mix of sweet and tart in this creamy filling of cream cheese in a lemon-flavored pie. If you like, you can top it with whipped cream or sugar-free
Creme Fraiche. This Lemon Cream Cheese Tart is perfect for a special occasion
to enjoy with the family while keeping it healthy and sugar-free; more
importantly, this delicious tart recipe is so easy to make, that most of the
time making this recipe will be literally just from baking the entire tart.
Ingredients:
Shortbread Crust:
11/2 cups Gluten-Free Bake Mix 2 (375 mL)
OR 13/4
cups Keto Bake Mix (425 mL)
6 tbsp butter, melted (90 mL)
1 tsp vanilla extract (5 mL)
Lemon Cream Cheese Filling:
12 oz regular cream cheese (375 g)
Liquid sweetener to equal 1 cup sugar (250 mL)
2/3 cup powdered sweetener, your choice (150 mL)
1/2
cup fresh-squeezed lemon juice (125 mL)
5 eggs
1 tsp vanilla extract
Instructions:
Preheat the oven to 350°F (180°C).
Shortbread Crust: In medium bowl, transfer Gluten-Free Bake Mix
2, OR Keto Bake Mix. In small bowl, combine melted butter and vanilla extract. Stir into dry ingredients. Press into 9-inch pie dish or a two-piece
tart pan. Bake 10 minutes.
Lemon Cream Cheese Filling: In food processor or in bowl with mixer, process cream cheese. Then add liquid sweetener, powdered sweetener, lemon juice, eggs and vanilla extract; process until smooth. Bake 25 to 30 minutes. Allow to cool and refrigerate.
