CREAMY STRAWBERRY POPSICLES

Delicious, truly creamy strawberry popsicles made in a jiffy!  You will love these! They are not icy at all – just super creamy and exploding with delicious strawberry flavor. These will be a hit with kids and adults alike. It is difficult to stop with one.


 Make sure your protein powder is fresh and tastes good, as the flavor will also shine through a bit in these popsicles.  If your protein powder is not tasty, simply leave it out.

 

The mixture is thick and creamy, so you will need a little spoon to scoop the creamy mixture into the popsicle molds, to prevent spilling.  These are addictive, so be warned.  I sometimes find one is not enough.  Fortunately, the calories are not too out of line, even although made with whipping cream.

 

You can customize the sweetness to your liking.


These are perfectly creamy popsicles, but if you don't mind them less creamy, you could replace some of the cream with Greek yogurt or sour cream.

 

I did not use fresh strawberries. Using frozen strawberries means these popsicles will be ready in no time flat!  I prefer using frozen strawberries in this recipe.

 

You will not hanker after store-bought strawberry popsicles with preservatives, sugar or other undesirable ingredients.  These are quick and easy to make with wholesome ingredients, and ready to eat as soon as they are frozen.

 

When measuring the strawberries in a measuring cup, it is not the most precise thing, as they typically do not come sliced.  A strawberry or two may peep over the top of the cup, but you will see gaps in the cup, so that is quite okay.

 

These popsicles do not freeze so hard that you have to wait long for it to be a creamy experience in your mouth.  They soften up fairly quickly. 

 

On a whim I added the protein to make them a nutritionally value-added treat! I have this feeling you will love these as much as I did.  I hope you will try them!

Ingredients:  

11/2 cups frozen strawberries (375 mL)

1 cup whipping cream, OR (250 mL)

  heavy cream

Powdered sweetener, to taste

  {about 1/2 cup (125 mL) sweetener}

2 tbsp vanilla whey protein powder (30 mL)

  (optional)

1/8 tsp strawberry extract, OR (0.5 mL)

  vanilla extract 


Instructions: 

In food processor or blender, combine strawberries, whipping cream, OR heavy cream, powdered  sweetener, vanilla whey protein powder and strawberry, OR vanilla extract.  Process or blend well until completely smooth and pour into 8 Popsicle molds.  Freeze.


Yield:  8 servings

1 serving (whey protein powder factored in - calories will be less without it and the carbs a bit less as well)
