SALMON IN GARLIC
BUTTER PARMESAN SAUCE
Cutting up a full salmon into fillets to
make pan-fried salmon was a great idea!
My husband and I thoroughly enjoyed this tasty salmon meal with its generous Garlic Parmesan Sauce. You can obviously buy salmon already cut into fillets; however, I had this one big salmon and cut it into wider fillets than one would actually normally buy. I felt like pan-frying the salmon instead of baking it. This is a very flavorful way of making salmon. The sauce adds tons of flavor while keeping the salmon moist. If you like you can use freshly grated Parmesan cheese; however, I simply used the kind that comes in a canister. You may increase the amount of cheese, if desired. I added the Mozzarella to help thicken the sauce.
For a variation, you could add onions and even green peppers and cook in the butter, then adding the garlic at the end of cooking, when the vegetables are soft.
If you love a bit of spice, you could add some crushed red pepper flakes or cayenne pepper to the sauce.
What makes this particular recipe so attractive is that it is a quick supper to make and so easy. Both are important when you don't have enough time to spend in the kitchen, but still want something tasty and even slightly impressive. Salmon typically doesn't let one down when cooked nicely.
This meal would be attractive served with lemon wedges. A squeeze of lemon over this fish will add extra zippy flavor.
1.9 lbs salmon (0.86 kg)
1 tsp salt (5 mL)
1/2
tsp black pepper (2 mL)
Garlic Butter Parmesan Sauce:
2 tbsp butter (30 mL)
2 tbsp crushed garlic (30 mL)
11/4 cups chicken stock (300 mL)
2/3
cup whipping cream (150 mL)
1/4
cup shredded Mozzarella cheese (60 mL)
2 tbsp Parmesan cheese (30 mL)
1 tsp dried parsley (5 mL)
Toppings:
Green onions, chopped, OR
Chopped fresh parsley
Fresh lemon wedges for squeezing
Rinse
and pat salmon dry with paper towels.
Cut into 4 fillets. Sprinkle both
sides of the salmon fillets with a mix of the salt and black pepper. In large nonstick frying pan, in extra-light
olive oil, and over medium heat, sear salmon fillets about 5 minutes on each
side.
Garlic Butter Parmesan Sauce: In nonstick frying pan, in butter and over
medium heat, cook garlic until turning fragrant. Stir in chicken stock, whipping cream,
Mozzarella cheese, Parmesan cheese and parsley.
Cook until cheeses have melted and the sauce has reduced quite a bit. Add salmon and cook until salmon is cooked
through. Serve sprinkled with chopped
green onions and lemon wedges on the side, if desired, for squeezing some fresh
lemon juice over the salmon.
