BUTTER BROCCOLI WITH PARMESAN AND MOZZARELLA

It is a keeper recipe.  So easy, quick and tasty, and it goes with practically any meal.  You can boil or steam the broccoli, either way.  I usually boil the broccoli until as tender crisp as I would like it.  The melted butter, Parmesan and seasonings are combined and then stirred into the broccoli to coat the florets completely.  Sprinkle with generous amount of Mozzarella cheese and then broil to get a lovely, appetizing golden brown color.  Watch carefully, as this process goes very quickly!


Who would have thought butter on broccoli would taste so good - too good not to share this recipe with you all, even although it is so simple. 


Broccoli is a vegetable we should all be eating more of, as it is healthy in so many ways.  This cruciferous vegetable is high in antioxidants and may be beneficial for eye health, heart health and warding off diseases such as cancer.  It contains fiber, vitamin C, vitamin K, iron and potassium.  It also contains folate which is particularly important for pregnant women to prevent spina bifida in the child.


Of course, you can use freshly grated Parmesan cheese; however, I simply used the kind in a canister and that worked well.    Another idea is to skip the Parmesan cheese and just do a mix of grated Swiss cheese and Mozzarella cheese.  I am not sure if you have ever combined those two cheeses - awesome!  Swiss cheese can be a little sharp in flavor for some people's tastes, but mixing the Swiss with the bland Mozzarella cheese fixes that perfectly!

Ingredients:  

4 cups chopped broccoli (1 L)

3 tbsp butter, melted (45 mL)

4 tbsp Parmesan cheese (60 mL)

1/2 tsp salt (2 mL)

1/4 tsp black pepper (1 mL)

1 cup shredded Mozzarella cheese (250 mL) 


Instructions: 

In large pot of boiling water, cook broccoli 8 to 10 minutes or until tender. Drain.

 

In small bowl, combine melted butter, Parmesan cheese, salt and black pepper.  Stir into broccoli.  Place on oven-safe serving dish.  Sprinkle with Mozzarella cheese.  Broil on high 3 to 4 minutes to melt and brown the cheese in places.  Keep an eye on it to prevent the cheese from turning too dark.
