This is a slightly spicy, deliciously creamy comfort casserole; however, if spice is not your thing, you can reduce or omit the red pepper flakes. It was my husband's idea to add the olives, as he loves those. You can use your favorite olives in this casserole.
Casseroles are my way of getting a quick and easy meal onto the table, plus having plenty of leftovers for the next day or two. Win win in my book!
Using a rotisserie chicken is what makes it so convenient, quick and easy. The creamy sauce, a bit of spice and some wholesome ingredients is what makes this what I would call comfort food.
Big flavor in this simple casserole which lends itself to some creative additions of your own.
This casserole will reheat well in the microwave oven or in the oven again - just make sure to cover it well if warming in the oven.
No canned soup is required to make this creamy casserole. I used sour cream and cream.

Ingredients:
Olive oil
2 green bell peppers, chopped
4 cups chopped, cooked chicken (1 L)
(from Rotisserie chicken)
5 oz cream cheese (150 g)
1 tsp red pepper flakes (5 mL)
1 tsp Montreal Chicken seasoning, OR (5 mL)
to taste

cup sour cream (175 mL)
1/2
cup chopped green onions (125 mL)
1/2
cup chopped olives of choice (125 mL)
11/2 cups shredded Cheddar cheese (375 mL)
Instructions:
Preheat the oven to 350°F (180°C).
In large nonstick frying pan, in olive oil, cook green bell peppers until softening. Add chicken, cream cheese, red pepper flakes and Montreal Chicken seasoning. Cook until cream cheese is incorporated. Remove from heat and stir in sour cream, green onions and chopped olives.
Place chicken mixture in 9 x 13-inch (23 x 33 cm) dish and top with
Cheddar cheese. Cover dish with foil and
bake 30 minutes. Sprinkle top of dish
with green onions. Serve.
