This ooey gooey cinnamon bun bread delighted me. It is so easy to make and have that fabulous cinnamon bun taste. This makes a great treat any time of day. I need to make this again.
This loaf does not rise much but remains more dense, soft and moist - like the center of a cinnamon bun. Delicious! If you are a fan of the center of a cinnamon bun, you're going to like this cinnamon bun bread.

I think one of the most beloved of comfort foods when it comes to baking is the "Cinnabon" flavor of the cinnamon buns we so fondly remember from our high-carb days.
You can make 18 slices, but since I liked these a little thicker, I cut 16 slices.

Miracle Dough Cinnamon Bun Bread
Low-Carb Cinnamon Roll Cake11/4 cups Gluten-Free Bake Mix 2, (300 mL)
OR 11/2
cups Keto Bake Mix, OR (375 mL)
almond flour plus 2 tbsp oat fiber (30 mL)
1/2
cup powdered sweetener (125 mL)
1 tsp baking powder (5 mL)
1 tsp cinnamon (5 mL)
1/4
tsp salt (1 mL)
1 cup shredded Mozzarella cheese (250 mL)
4 oz cream cheese (125 g)
1 large egg. whisked
Frosting:
2 oz cream cheese, softened (60 g)
3 tbsp powdered sweetener (45 mL)
1 tbsp butter, melted (15 mL)
1 tbsp heavy cream (15 mL)
1/4
tsp vanilla extract (1 mL)
Preheat the oven to 350°F (180°C). Line an 8 x 4-inch (20 x 10 cm) loaf pan with
parchment paper.
In
medium bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix, OR alternative, powdered sweetener, baking powder, cinnamon and salt.
In
microwaveable bowl, combine Mozzarella cheese and cream cheese; nuke 50 seconds
or until cheese has melted. Stir and add
egg as soon as cheese has cooled slightly.
Add dry ingredients and stir all together well. Turn out into prepared loaf pan and bake
around 30 minutes. When loaf has cooled
down, ice with the frosting.
Frosting: In medium bowl, stir together cream cheese,
powdered sweetener, butter, heavy cream and vanilla extract.
