BAKED PORK TENDERLOIN
IN BALSAMIC SAUCE
This pork tastes amazing! It just goes to show one does not always have to grill pork tenderloin, as it can be just as tender and tasty done in the oven. This is a no-fuss recipe that is made with minimal preparation and then the oven does the work and 25 minutes later, it is done! I was impressed with how flavorful the pork was.
Use a good-tasting balsamic vinegar. This is the simplest sauce. I liked it so much. Next time I think I will try a sweet balsamic glaze, as I see a lot of recipes along those lines. It should be easy to make a low-carb version. Stay tuned! I need to find ways to use my balsamic vinegar, besides this recipe and my Green Bean and Tomato Salad that we all just love in our family.
This pork looked as if it had been barbecued. Usually we barbecue our pork tenderloin.
While the oven is cooking the pork, you can be preparing some tasty sides to go alongside your dinner. You will need to work fairly quickly as this cut of meat does not take long to bake.
Pork tenderloin can be company fare or an everyday meal. It is so juicy and tender done this way. The sauce adds a lot of tasty flavor.

Breaded Pork Tenderloin with Feta, Cream Cheese and Spinach
Ingredients:
2 tbsp olive oil (30 mL)
1.7 lbs pork tenderloin (0.8 kg)
Balsamic Sauce:
2 tbsp balsamic vinegar (30 mL)
2 tbsp light-tasting olive oil (30 mL)
1 tbsp minced garlic (15 mL)
1 tbsp seasoning salt (15 mL)
1/4
tsp salt (1 mL)
1/4
tsp black pepper (1 mL)
Preheat the oven to 425°F (220°C).
In
large nonstick frying pan, in olive oil and over high heat sear pork on both
sides until golden brown in places.
Place
pork in casserole dish.
Balsamic Sauce: In small bowl, combine balsamic vinegar,
olive oil, minced garlic, seasoning salt, salt and black pepper. Whisk to combine well.
Pour
most of the sauce over the pork on both sides, keeping some for pouring over
the pork halfway through cooking. Bake
25 minutes, (remembering to pour remaining sauce over pork at the half way mark),
or until pork is no longer pink inside.
Place pork on serving dish and tilt casserole dish to pour sauce in the
dish over the pork. Slice and serve.
