LOW-CARB CREAMY CHOCOLATE  FUDGESICLES

I loved these very chocolaty and creamy popsicles.  If you can get past the idea of avocado in your popsicles you will love it!  I tested the banana version, but I am assuming if you use more avocado, it will taste just fine, too.  My husband who was not a fan of using our avocadoes in this way would not let me do the all-avocado test! LOL


Melty creamy chocolate popsicles are hard to beat on a hot day or while enjoying your favorite TV show.


These would fall under the category of healthy popsicles in my opinion.


I have simple, cheap popsicle molds.  It is so easy to release them.  Hold them briefly under running hot tap water.   I nuke them 8 seconds after that and enjoy a creamy, melty chocolatey popsicle.  It is difficult to avoid going for a second popsicle sometimes.  I love them, but my husband not so much, so your mileage may vary.


The sweetener tables for all the most common scenarios are in my cookbooks for your convenience.  For example, ¾ cup sugar sweetness (not ¾ cup liquid) using my bottle of sucralose from the EZ-Sweetz brand (whether the smaller one of 0.5 oz or the bigger yellow bottle of 2 oz – Zero carbs) would be 18 or 36 drops respectively.  Here is an article and video about the sweeteners. Part 1.  There is another article and video here: Part 2.

Ingredients:  

1 small frozen banana, OR

  1/2 cup mashed avocado (125 mL)

1 cup mashed avocado (250 mL)

1/2 cup sour cream (125 mL)

6 tbsp Dutch cocoa (90 mL)

1/3 cup whipping cream, OR heavy cream (75 mL)

Liquid sweetener to equal 1 cup sugar (250 mL)

4 tbsp powdered sweetener (60 mL)

 

Instructions:

In food processor, process banana, OR  1/2 cup (125 mL) mashed avocado, 1 cup (250 mL) mashed avocado, sour cream, Dutch cocoa, whipping cream, OR heavy cream, liquid sweetener and powdered sweetener until smooth.  Fill 9 popsicle molds or simply 8 popsicle molds and eat the few teaspoons leftover as a tasty pudding.
