MEXICAN TORTILLA CASSEROLE
Update: Mission has zero carb tortillas. Wow, well if you use those instead of the 4 g net carbs Carb Balance Mission tortillas, this casserole just became a bit less in carbs: 7.2 g net carbs. It is a keeper cheesy, Mexican-inspired recipe, and as it is so tasty, I think you will love it! It is super easy and quite quick to make, assemble and eat! You have to love recipes like this, which are always a crowd pleaser as well. It is lovely and cheesy, so tastes pretty rich - and what's more, it tastes high-carb. That said this recipe is very much a moderate carb recipe, so Keto dieters might not be able to have this, unless you can find low-carb tortillas that are lower in carbs than Carb Balance Mission Tortillas.
This is family-style comfort food for a family gathering. I love it served with a garden salad using Romaine lettuce with tomatoes, etc. and my favorite salad dressing: Cracked Pepper Salad Dressing
You will definitely tantalize your taste buds with this meaty, Mexican-flavored casserole. Both my husband and I went back for seconds. This is a very satisfying meal, don't get me wrong. It is substantial, but we were just enjoying it so much.
This casserole can be prepared ahead of time and baked just before serving a crowd. You can double the recipe, too, and make in two casserole dishes. This is bound to be a hit! The best part? It is so easy to prepare, and then so good to eat!
So, if preparing this casserole ahead of time, assemble in the dish and cover with plastic wrap, then refrigerate. You could cover it with foil as well, but since this dish is baked uncovered, you don't need to waste the foil.

2 lbs lean ground beef (0.9 kg)
2 tsp minced garlic (10 mL)
Taco Seasoning (1 package commercial),

11/2 tsp salt ( 7 mL)
11/2 tsp chili powder (7 mL)
14.5 oz can diced tomatoes (411 g)\
Half a can soy, OR black beans (optional)
(You can use more if in
maintenance mode)
6 oz tomato paste (180 g)
2 cups shredded Monterey Jack cheese (500 mL)
2 cups shredded Cheddar cheese (500 mL)
7 Low-Carb Tortillas
(Carb Balance Mission Tortillas)
Garnish Ideas:
Tomatoes
Avocado
Cilantro bits
Sour cream and whipping cream mix to drizzle
Homemade Taco Seasoning (or use commercial):
1 tbsp chili powder (15 ml)
11/2 tsp cumin (7 mL)
1 tsp black pepper (5 mL)
1/2
tsp onion powder (2 mL)
1/2
tsp salt (2 mL)
1/2
tsp red pepper flakes (2 mL)
1/2
tsp oregano (2 mL)
1/4
tsp garlic powder (1 mL)
Preheat the oven to 350°F (180°C).
In large, nonstick frying pan, cook ground beef along
with garlic, until the meat is browning.
Add Taco Seasoning, salt and chili powder. Stir well.
Add diced tomatoes, beans of choice (if using) and tomato paste; combine
well. Continue cooking for 5 minutes,
breaking the tomatoes up a little with the spatula.
Homemade Taco Seasoning: In small bowl, whisk together chili powder,
cumin, black pepper, onion powder, salt, red pepper flakes, oregano and garlic
powder.
To assemble the casserole: Layer 31/2 tortillas
on the bottom on a greased 9 x 13-inch (23 x 33 cm) casserole dish.
Cut the tortillas where necessary to fill the spaces. Top with half the meat mixture and half the
combined cheeses, and repeat starting with tortillas again. Bake 30 minutes. Allow to cool 10 minutes before adding the
garnishes of choice. Serve.
