DECONSTRUCTED CHILI DOG CASSEROLE
This is a real kid pleaser and is also great served alongside eggs and avocado for breakfast.
If you have the carb allowance, you could grease the bottom of the casserole dish and lay out another 4 low-carb tortillas, and then layer as suggested in the recipe instructions. I don’t think it is necessary, but it could make the tortillas much more noticeable in this dish.
Deconstruction of the usual chili dog casserole where the hot dog is rolled in the tortilla (you can also do that, of course) just means I did something a little unconventional to be different by layering the tortillas instead. I also sliced the hot dogs in half longitudinally. You still get all the taste with fewer hot dogs needed in the casserole. Instead of needing, say, 10 hot dogs, I used 6 hot dogs.
I have hot dogs occasionally and I don’t see a problem with that. It is no worse to my mind than some cold cuts/meats which I rarely eat.
The flavors in this casserole are rich and savory. I didn't use any beans or onions, so that cuts down on carbs. No buns, no high-carb tortillas either.
There is no need to cover the dish in foil, as none of the tortillas are exposed. This is a very meaty and cheesy dish that pairs well with an ordinary salad with your favorite dressing. Try my Cracked Pepper Dressing; a favorite for my husband and me. So good! I am sure if you try that dressing, you will hooked for life. I am!
11/2 lbs lean ground beef (0.68 kg)
14.5 oz can diced tomatoes (411
g)
Half, 6 oz can tomato paste (170 g)
(You can use the whole can, if desired)
2 tbsp mild chili powder (30 mL)
2 tsp minced garlic (10 ml)
1 tsp salt (5 mL)
1 tsp cocoa, optional (5 mL)
6 hot dogs, sliced longitudinally in half
4 low-carb tortillas
11/2 cups shredded Cheddar cheese (375 mL)
Instructions:
Preheat the oven to 350°F (180°C).
In
large, nonstick frying pan, brown ground beef, breaking it up small while it is
cooking. Add tomatoes, tomato paste,
chili powder, garlic, salt and cocoa (if using). You can add a little water, if necessary. Mix well. Continue cooking briefly.
In
9 x 13-inch casserole dish, layer half meat sauce and layer with skinny, longitudinally-cut hot
dogs. Top with tortillas, cut to cover
properly. Then top with remaining meat
sauce and shredded Cheddar cheese. Bake
25 to 30 minutes.
