I am always looking for ways to make ordinary meat loaf more interesting. This meat loaf with the classic filling of Cordon Bleu ham and Swiss cheese was a winner in my husband's eyes. If desired, instead of Swiss cheese, you can use Provolone cheese.
We
love meat loaf - sort of like meat balls in loaf form. This juicy meat
loaf oozes molten Swiss cheese. Again, if you prefer, you can use
Provolone cheese. I sliced my Swiss cheese from a block of cheese,
but I think Swiss cheese slices would work really well here, and if you
like lots of cheese - double up on the cheese, as the slices I had were
quite thick.
One can prep this meat loaf in the morning and bake it for dinner later on. Now that's a meal I can get behind! This is comfort food and would be great served with mashed cauliflower on the side and another vegetable or a big salad with your favorite dressing.
The
spices I used were minimal. You can increase the garlic powder and add
onion powder as well. I think that would be good, thinking in
hindsight. You can add them in equal parts, no problem.
There is no need for bread crumbs as the coconut flour works very well as a binder, besides the egg. If you like, you can spread a little Dijon mustard over the ham and then add the cheese.
I garnished the loaf with a little chopped green onion. You can use chopped, fresh parsley.
This meat loaf is fun to make. On parchment paper, pat out the meat into a rectangle and top with the ham and Swiss cheese. Then roll it up using the parchment to help you - jelly roll style! Pinch all the edges to seal and place on the parchment paper seam side down. Spread the tasty topping over the surface of the meat loaf and even down the sides. During the last 15 minutes of cooking, cover with foil, to prevent the topping from getting too dark, and from drying out. This is the easiest meat loaf to make, trust me on that. It is also impressive-looking (kind of) for the amount of work, etc. required.
Ingredients:
2 lbs lean ground beef (1.9 kg)
1 tbsp coconut flour (15 mL)
1 large egg, fork beaten
2 tsp Montreal steak spice (10 mL)
2 tsp dried parsley (10 mL)
1/4
tsp garlic powder (1 mL)
1/4
tsp salt (1 mL)
1/4
tsp black pepper (1 mL)
6 slices deli ham (4 oz; 120 g)
6 slices Swiss cheese (4 oz; 120 g)
Topping:
3 tbsp tomato paste (45 mL)
Sweetener to equal 2 tsp sugar (10 mL)
1 tsp vinegar (any kind)
In
large bowl, place ground beef and coconut flour.
In
medium bowl, beat egg with fork and stir in Montreal steak spice, parsley
garlic powder, salt and black pepper.
Add to ground beef and mix well.
On
parchment paper pat the ground beef out to 18 x 9-inch (46 x 23 cm)
rectangle. Lay the slices of ham on the
surface of the rectangle and the Swiss cheese slices on top of the ham. Roll up
from the short side. Pinch edges to
seal. Place seam side down on a baking
sheet.
In
small bowl, mix tomato paste, sweetener and vinegar. Spread over top of meat loaf. Bake about 1 hour but check after 45 minutes. Cover with foil during the last 15 minutes. Let cool 10 minutes before
slicing.
