This recipe makes three wonderful crispy chaffles!! I married the two different chocolate chips - white and dark chocolate chips, but you can use one or the other, if that is your preference.
For a crispy chaffle cook about 4 minutes and then let it sit for a minute or two. Day old chaffles can be placed in a pop-up toaster. Just make sure not to let them get too dark.
Chaffles are waffles that are made with cheese in them. Typically they are made in a mini waffle maker with one mold and these are also made in such an appliance. The chaffle craze has been huge. I never got on that band wagon in the beginning because I didn't find the mini chaffle/waffle maker here in our country. Finally I did find it here, and then my husband promptly ordered the 4-mold chaffle maker from Amazon, which is great when you want to double or triple smaller recipes for more people - plus, it saves time in that situation. If you have not yet tried chaffles, you are in for a treat. I was in for a treat, too, trust me, when I finally tried a few different recipes that I came up with. Admittedly, I learned from others as well, rather than reinvent the wheel.
These are more along the lines of dessert for breakfast! My favorite kind of thing! Great with a cup of tea or coffee. You can make it look spectacular with whipped cream and chocolate chips melted with cream to make a sauce, poured over all. Or you can use Choc Zero Chocolate Syrup or sugar-free pancake syrup or both! Decadent! Sometimes I like to use my homemade Strawberry or Bumbleberry jam for chaffles. I like the combination with chocolate in any case.
I usually like to double this recipe and use my bigger chaffle maker with 4 molds. However, sometimes I just want enough for three. You can make 2 chaffles out of this and then they will be a bit thicker.
These low-carb chaffles are a great treat in the morning and if you add all the bells and whistles like a fruity jam, pancake syrup or whipped cream and chocolate sauce this recipe is taken from good to decadent in a heartbeat. I do make chaffles from time to time these days as they are quick, tasty and satiating, and they also can satisfy my sweet tooth if I dress them up appropriately. That sounds funny, but you know what I mean. So chaffle recipes will be on my things to do list from time to time. I have not experimented with replacing the bake mix with almond flour, but you could try that, as so little bake mix is actually used. If you prefer a softer chaffle versus crispy, you can try my sandwich chaffles (scroll down at this link) and simply add chocolate chips to it and a little sweetener.

people are now familiar with the Dash mini waffle maker. They are so
cute, that you may want to buy one for yourself. I put mine on top of
my food processor lid which is placed in the bowl upside down. The fire
engine red appliance is what I bought. It is eye catching in my blue
and white kitchen with some red accents in the back splash tiles. This
keto chaffle recipe is one I will definitely make from time to time.
INGREDIENTS:
3 tbsp Gluten-Free Bake Mix 2, (45 mL)
OR 31/2 tbsp Keto Bake Mix (52 mL)
1/4
tsp baking powder (1 mL)
1 large egg
Liquid sweetener to equal 2 tbsp sugar (30 mL)
1/4 tsp maple extract, OR vanilla extract (1 mL)
1/2
cup shredded Mozzarella cheese (125 mL)
2 tsp sugar-free chocolate chips (10 mL)
2 tsp sugar-free white chocolate chips (10 mL)
Optional Garnishes:
Whipped Cream
Chocolate Sauce (1/4 cup chocolate chips and 1 tbsp cream
melted in the microwave oven in 30 seconds or so)
Pancake Syrup
Sugar-free Jam or Sugar-free strawberry sauce
INSTRUCTIONS:
In
small bowl, combine Gluten-Free Bake Mix 2, OR Keto Bake Mix and baking powder.
In
another bowl, whisk egg with liquid sweetener and maple extract. Stir in Mozzarella cheese and two different
types of chocolate chips. Place some of
the batter in heated chaffle maker and cook about 3 minutes. Repeat two more
times.
Helpful Hints: I like to remove the
chaffles carefully with the tip of a blunt dinner knife. Try one or two of the optional garnishes. They are great with
softened butter or my Healthy Butter and even with your favorite sugarless jam. I usually have homemade sugarless
strawberry jam in the fridge. It is so
easy to make with gelatin.
