Combining these two beloved and classic flavors is one of my favorite things to do when it comes to fudge and candies, not to mention in baking as well.
You can customize this fudge by adding chopped peanuts, almonds, pecans or shredded or flaked coconut. I used chunky peanut butter, however you can use smooth peanut butter, too. I find Skippy peanut butters are the tastiest and you don't have to deal with oil at the top of the jar. True, it may mean there are some hydrogenated fats in it, so it is up to you. If you have a peanut butter with oil at the top, make sure to mix it properly in a food processor before using.
Most fudge recipes use an 8-inch (20 cm) dish - mine is a glass dish. This recipe is not a true fudge. That is why I called it fudge-like.
Of course, high-carb fudge is always a sugar fest and that is not great for our blood sugar. As we get older, those indulgences of our youth are in the past. Most of us as we age find that our fasting blood sugar is no longer stellar and we need to fight to manage it well to prevent diabetes. It is normal as we age to have higher blood sugar readings, but that doesn't mean we should not be careful.
This is just a little treat that I made one day and decided to share it on my blog. Once all the squares are cut, keep these sorts of desserts in an airtight container. Chocolate peanut butter fudge is one of my favorite confections. I have many to choose from - just look in the Index on the right-hand side of my blog or choose the photo index at the top of my blog. Typically all my fudge recipes are kept in the refrigerator.
Make sure your peanut butter is at room temperature. This is such an easy fudge recipe, or fudge-like recipe, that you can whip it up in minutes and put it in the fridge to set up properly.
If you don't have a microwave, you can do the melting of chocolate in a saucepan. Just be sure not to leave it alone. I have another fudge you may want to look for on my blog that is made with my homemade sweetened condensed milk. Super quick and easy! I have fudge with peanut butter swirls and you name it. If you do your melting of the chocolate in a saucepan, you can use medium heat to start and then quickly lower the heat.
1 cup sugarless chocolate chips (250 mL)
3 oz unsweetened Baker’s chocolate (90 mL)
2 tbsp heavy cream (30 mL)
Liquid sweetener to equal 1 cup (250 mL)
sugar, OR to taste
1/2
cup chunky peanut butter (125 mL)
1 tbsp heavy cream (15 mL)
1/2
tsp vanilla extract (2 mL)
1/4
cup sugarless chocolate chips (60 mL)
INSTRUCTIONS:
Line
an 8 or 9-inch square glass dish with parchment paper. Spray the dish with cooking spray first to
help the paper adhere nicely.
In
medium bowl, microwave 1 cup (250 ml) chocolate chips in 30 second increments,
stirring each time, until fully melted.
You should be able to stir it with the last 30 second increment and see
the chocolate fully melt while stirring.
Do the same with the Baker’s chocolate in another bowl, but add 2 tbsp
(30 mL) heavy cream before nuking. Nuke
in 30 second increments, stirring in between.
Do be careful as the chocolate can seize pretty quickly. Stir between nuking. With the last 30 second increment, the
chocolate may look like it has seized, but stir it well, and it should be fine.
Add
to the melted chocolate chips along with the liquid sweetener, peanut butter, 1
tbsp (15 mL) heavy cream and vanilla extract.
Stir well.
In
food processor or blender, process 1/4 cup (60 mL) chocolate
chips until finely ground. Stir into
chocolate mixture. Spoon into the
prepared pan and using plastic wrap, spread the mixture evenly and firmly into
the dish. Refrigerate until firm. Remove from dish using the parchment paper as
handles. Remove the paper and place the
chocolate on a cutting board. Cut the chocolate
into 6 x 5 squares using a long serrated bread knife. Press down with the knife to cut rather than
using a seesaw motion.
