MOZZARELLA CABBAGE
FRITTERS
If you are looking for something fun and tasty to make with cabbage, these easy fritters should fit the bill. I love healthy veggies to go with my dinner. Tasty vegetables make or break the meal. This one won't disappoint and you will want to reach for this easy recipe from time to time, just as we do.
The texture of these fritters is real good with the finely shredded (by hand) cabbage which is chopped finely. I also added grated carrot for extra nutrition, but you can skip it, if desired. One fritter has almost as much protein as one small egg. The carbs are very low and in keeping with moderate low-carbing. Skip the carrots if you are doing Keto and use almond flour.
You can even make a delicious dipping sauce for these, if you like.
The ingredients are simple and you will most likely have them in your house. I used Mozzarella cheese to help bind the fritters, as well as the eggs and bake mix or almond flour.
The cabbage fritters are best fresh; however, they will keep a few days in the refrigerator in an airtight container.
Cabbage is a super healthy vegetable high in fiber and nutrients such as Vitamin C and Vitamin K, Vitamin B6,folate, manganese, potassium and calcium. It is a good vegetable for keeping inflammation at bay and blood pressure lower.
If you like spice, you could add some red pepper flakes or cayenne pepper - not much as it doesn't take much to add heat to these.
Frying the cabbage fritters like this brings out their natural sweetness. It is crispy on the outside and tender on the inside.
Remember when low-carbing we are skipping the starches on our plate, so veggies become the star of the show.
You can customize this recipe with a dipping sauce or different seasonings used in the cabbage fritters.
If you decide to go the route of having a dipping sauce, these would make an interesting appetizer for family and friends.
You could serve them with tablespoons of sour cream and chopped green onions.
Make sure your skillet or large frying pan is a good nonstick one and that the pan is set on medium heat. Reduce the heat when necessary. When golden brown on one side, turn and cook on the other side until golden brown as well. The batter cooks up pretty fast. The flavor of these cabbage fritters will delight.
I used minced garlic in a jar that I get from the equivalent of Costco, but you could also use garlic powder in a pinch.
Keep the fritters in a sealed container in the fridge. A feta dip or honey mustard dip would pair well with these.
This makes a great side dish. If you like you can even add fresh herbs such as parsley to these. These make a good substitute for a starch on your dinner plate. I want to find more cabbage recipes to make as they are so healthy. I used Mozzarella cheese as it binds these fritters so nicely, but you can also use Cheddar, if desired and serve them with a dollop of sour cream or mayonnaise.
INGREDIENTS:
1 lb shredded cabbage (0.45 kg)
1 cup shredded carrot (250 mL)
1 cup shredded Mozzarella cheese (250 mL)
1/2
cup Gluten-Free Bake Mix 2, OR almond flour (125 mL)
5 large eggs
1 tbsp minced garlic (15 mL)
1 tsp salt (5 mL)
1/2
tsp black pepper (2 mL)
INSTRUCTIONS:
In
large bowl, combine shredded cabbage (shredded this manually with a knife and
chopped it quite small), shredded carrot (used my food processor grater), Mozzarella cheese, and Gluten-Free
Bake Mix 2, OR almond flour.
In small bowl, beat eggs with fork and stir in minced garlic, salt and black
pepper. Add to cabbage mixture; mix
well. Using a 1/4 cup
(60 ml) measuring cup, form fritters and fry in light-tasting olive oil on both
sides until golden brown.
Yield: 20 fritters
